Precursors with the launching of the Ready to Cook Mussel in 1996,
we understood very soon the benefits of this product
completely adapted to the new eating habits.
The Ready to Cook mussel offers a huge saving of time in the preparation for the restaurants as well as for the individuals.
An optimal product freshness
Our processing unit is based on the port of La Rochelle to be near the harbour unloading zone and the carriers. In that way, we can work in just in time : our production of mussels is harvested, processed and dispatched the same day for an optimal freshness.
 
Quality leader in the ready to cook mussel market
 
To become the quality leaders in the Ready to Cook mussel market, we have equipped our workshop with a state of art process engineering for each step of the cleaning. Here is a line of seven machines to obtain the best cleaning without spoiling the quality of the mussel.
The machine extracts the beards of mussels, named byssus, thanks to a succession of smalls rollers that pinch and cut the filaments.
By concern of perfection, the last operation of the line is handmade for a good finishing : the last grits are sorted out from the mussels by our employees on the inspection conveyor.

It is important to keep in mind that the sea is a natural environment on which men have no control. Each day, we try to cultivate and select products with faultless taste and appearance. Unfortunately, each season brings unpredictable events and we must accept that the quality of sea products can vary from one year to another.
